Are our Children Safe? Introducing The K.I.D.S. Safety Program (Kitchen Improvements for Discerning Schools) – Food Quality through Temperature Performance and Defrost Control, XDX Innovative Refrigeration
Chicago, IL – 24 May 2005(PRN): Are our Children Safe? Today XDX announced “The K.I.D.S. Safety Program 2005”, which is a program to improve the quality of food for children through enhanced refrigeration performance.
Are Our Kids Safe? Is Your System FDA Compliant?
Introducing K.I.D.S. - Kitchen Improvements for Discerning Schools.
The K.I.D.S. Safety Program has several goals. We are focusing on increasing the awareness of the food safety issues that our school systems are facing today. With an alarming rate of schools that are not in compliance with FDA codes, it is imperative that technicians, operators, school management, as well as parents understand the associated risks.
With recent FDA reports showing high levels of non-compliance in schools, as well as recent investigative reports highlighting refrigeration issues in certain restaurant chains, we each need to do our part for the community.

Thirty-Percent (30%) of the Elementary Schools fall short of the minimum temperature requirements for FDA food safety compliance. *
XDX Innovative Refrigeration announced The “Kitchen Improvements for Discerning Schools” (K.I.D.S.) Safety Program, as a three part program that educates, encourages, and enables operators and technicians to improve awareness and to achieve better kitchen refrigeration equipment performance.
Improper holding temperatures and excessive defrosts will increase the growth rate of potentially harmful spoileage bacteria in food.
XDX has a solution that dramatically reduces defrost cycles and energy consumption in nearly every application.
XDX can improve the safety of food. Independent Laboratories have tested and documented that “The growth rate for spoilage bacteria under isothermal conditions was 65% of the rate for product subject to defrost cycles... Thus, product with a traditional shelf-life of 3.3 days would have a 5 day shelf-life when temperature is held constant. The data from this study supports the claim that the XDX refrigeration concept can produce a significant increase in product shelf-life.”
School management may not become aware of weaknesses in their refrigeration equipment until after it's too late. Additionally, it's not uncommon for poorly performing refrigeration equipment becoming accepted as the norm because of unsuccessful attempts to resolve performance issues.
XDX is loaning out simple to use data loggers for schools to easily determine the current performance of their refrigeration systems. Often, refrigeration equipment is designed to measure temperatures in areas of the system that give the best desired results. In all honesty, these temperature readings do not always accurately measure the true temperature at the location of the product.
The sensors are very small boxes that you simply place inside your refrigeration unit. Let it record data for a few days and simply send it back to us. We will extract the data, drop it into a report, and send it back to you. Of course, complete confidentiality is respected with this information, and the data is for your eyes only. We feel that monitoring your temperatures in your real-world environment will help you to make the best informed decision about your system and the safety of your students.
XDX Technology and Beverage-Air, a Division of Carrier Commercial Refrigeration, recently won the coveted Dealers’ Choice Award from Food Equipment & Supplies magazine and National Restaurant Association’s Kitchen Innovation of the Year 2005.
